Yunshang Rice Noodle House in Chinatown is a budding franchise that is a cross between noodle soup and hot pot, a cuisine from Yunnan province in China that derived from a folk tale. The chain is known for serving pork bone broth with a platter of other ingredients separated to mix in, including the noodles itself (unlimited noodle refills that is).
You will also find many side dishes and skewers, such as sliced beef, ox tongue and squid tentacles that are great appetizers to snack on as you wait for your main. All are reasonably price at under $5.
Yunshang does not skimp out on the supply chain process, and locally sources all produce and ingredients in order to control the quality of their food. The broth takes over 10 hours to make, and is lean but rich in flavour even after draining excess fattiness.
