Taline, renowned for its blend of traditional Armenian flavours with modern culinary techniques, is thrilled to unveil its latest culinary venture, the back alley pop-up. Beginning on June 1st, this pop-up will offer a taste of high-quality street food, cooked on a charcoal grill by chef Sebouh and his team. Located in the back alley behind Taline, the pop-up will operate from 12-4 pm every Saturday. chef Sebouh found inspiration for the pop-up from his regular grilling sessions of various cuts of the whole lamb, including the shoulder and loin, which are typically not used in their dishes. Recognizing the rich flavour and tenderness these cuts bring, chef Sebouh drew from Armenian culinary traditions, where high-fat content in kebabs ensures a depth of flavour. The pop-up will mirror this approach, offering delectable kebab sandwiches that capture the essence of Armenian cuisine.Picture this: savoury Lamb Kebab sandwiches, meticulously crafted with Ontario lamb, harmonizing with zesty lemon, tomato, crisp shallot, and cucumber, all in a single mouthwatering bite. Complement your sandwich with Gedzou Patates, boasting the richness of confit potato, with black garlic toum, and the subtle heat of Urfa Biber. And for the perfect finale? Indulge in Irar Hed, a decadent swirl of Gata (Armenian shortbread) and Soorj (Armenian coffee) soft-serve which pays homage to the classic combination of shortbread and coffee, delivering a truly indulgent experience.

Chef Sebouh envisions the pop-up as an extension of the authentic and communal spirit of Armenian street food. Rooted in the natural camaraderie of grilling and enjoying food together, the idea for the backyard pop-up was born out of a desire to celebrate quality ingredients and the joy of shared meals.
