Cocktails:

- Martinez, this drink comes from the 1860s/70s – Paired with Spiced Rubbed Lamb Sirloin: Canadian Lamb Sirloin, Spring Succotash of white beans, fava beans, bacon, corn and cherry tomatoes, Cherry Balsamic Compote

- Corpse Reviver no 2, this is from 1930 – Paired with Malpeque Oyster: Pomegranate Mignonette, Pickled Pear

- Monte Carlo cocktail, this drink from 1950s – Paired with Braised Pork Belly: Marinated in orange Zest, Blueberry Cornbread, Pickled grapes, Jalepeno, Blueberry Gastrique

- Espresso Martini, this drink is from 1983 – Cremoso: Dark chocolate and toasted pecans brownie torte with smooth espresso cremeux, topped with coffee-scented mascarpone whipped ganache and candied pecans. Gluten free, contains eggs, dairy, and gelatin.
