A Montreal-based pizzeria is gearing up to open its first Ontario location this Friday in The Beaches. 

Neapolitan Pizzeria No.900 drew inspiration for its name from the AVPN (Associazione Verace Pizza Napoletana, The True Neapolitan Pizza Association) rules of cooking a pizza at 900 degrees for 90 seconds. 

The pizza chain has over two dozen locations sprinkled throughout Quebec and one in Lyon, France. 

No.900's Toronto location is set to stay true to its classic menu crafted by pizza world champions, Executive Chef Mirko D'Agata and R&D Chef Fiodar Huminski. 

The brand's pizzas are made using 00 flour with low proteins, which undergo a 24-hour process before being baked in a handmade Marra Forni pizza oven. 

The pizzeria also uses organic Costa Amalfitana tomatoes, which are cultivated in nutrient-rich volcanic soil on the Mountain of Tramonti. As a result, the brand has acquired land in the same region and donated it to a local university for agricultural students to learn about the sustainable cultivation of the tomatoes. 

The menu at No.900's Toronto location will include a selection of white and red pizza offerings and an extensive list of starters, including charcuterie, mozzarella, burrata, and fresh salads. 

To pair with the saucy pies, the pizzeria will also offer a variety of privately imported Italian wines from artisan winemakers. 

Neapolitan Pizzeria No.900 will open its doors on Friday, Aug. 23 at 1987 Queen St. E.
